The program explores the science of functional foods, phytochemicals, food processing, and global food systems while incorporating emerging tools such as artificial intelligence, data analytics, and applied learning experiences.
Upon completion, students will be able to:
Understand the scientific principles of functional and healthy foods in preventing chronic disease.
Evaluate global food systems and their impact on nutrition, food security, and public health.
Apply data-driven and AI-enhanced approaches to food and health challenges.
Collaborate across healthcare, food, and community sectors to design evidence-based solutions.
Demonstrate professional readiness through résumé development, interview preparation, and applied learning.
Flexible online and on-campus courses allow both graduate students and working professionals to tailor the program to their needs. Through a required Applied Learning Experience, students gain hands-on opportunities—such as mentorships, community projects, or virtual simulations—to translate classroom learning into real-world impact. This program is ideal for those seeking to advance careers in nutrition, healthcare, agriculture, and food innovation while contributing to the growing movement to use food as medicine.
