AAI 867 - Zoonotic Pathogens in the Food Chain Credits: 2
This interdisciplinary course is designed for students to expand their knowledge of how modern food production systems contribute to the risk of zoonotic diseases, and where mitigation strategies need to be focused. Through case study discussions, students will examine attributes of microorganisms that allow potential contamination of food sources, as well as how new trends in animal production, such as organic livestock farming and raw milk consumption, influence safety in the food chain.
