SPAN 564 - Food in Spanish American History and Culture

Traces the sociocultural significance of crops such as chocolate, corn, sugar, and potato in Spanish America, developing themes including race, class, health, commerce, and agriculture. Cultural texts illustrate the role of food across history from the pre-Hispanic era to the present. Develops cultural awareness, critical thinking, communication, and research skills.
