GRSC 625 - Flour and Dough Testing Credits: 3
The focus of Flour and Dough testing is the analytical tests used to determine attributes of different flours. This course will provide a broad understanding of standard analytical methods and procedures commonly used in flour quality testing. This course will discuss how analyses are done as well as how to evaluate, interpret, and use the results.
Note: Two (2) one-hour lectures and one (1) lab session per week.

Requisites: Recommended prerequisite: GRSC 602.
