ASI 777 - Meat Science and Muscle Biology

Credits: 3

An in depth-overview of the conversion of muscle to meat as well as the impact of inherent characteristics of muscle on fresh meat quality. The fundamental concepts in the course will be discussed with an application to industry standards.
