ASI 777 - Fresh Meat Technology

Fresh meat properties, value, marketing, and appropriate handling procedures. Current meat technology and pertinent aspects of the domestic and international meat industries will be discussed.

Note:
Two hours lecture and three hours lab a week.

Requisites:
Prerequisite: ASI 350; senior or graduate standing.
